June 14, 2011- Refrigerator Roulette

Ben had plans with a couple friends after work tonight.  Katie and I were planning on going to our PEPS gathering for dinner, but ended up staying home because she wasn't feeling well.  We've been fighting a cold for several days, and I thought we were on the mend.  When she was really fussy after her nap this afternoon, I looked at her throat.  It was swollen and red.  We'll probably end up at the doctor tomorrow to get her checked out.  We have a new baby in our PEPS group, and I don't want to get that family sick.  

When asked what she wanted to eat for dinner, Katie surprised me and said pepperoni.  She never wants to eat it on a pizza, but seems to like it just fine by itself.  Although she told me she didn't want any cheese, she ate a stick of string cheese when I handed it to her.  She also had a few slices of apple.  I had a cheeseburger, using a left over grilled patty from last Friday.

Saturday, 4/9/2011

This was our third day at Disneyland.  I'll start with what we had for dinner and then give a quick summary of what we did today.  We had dinner at the Naples Ristorante e Pizzeria in Downtown Disney.  Our family, all six of us, shared a 1/2 meter, thin crust, pepperoni pizza.  When the pizza was brought to the table, we were all sure we weren't going to be able to finish it.  Well...we did:)  It was huge, but the thin crust made it easier to eat the whole thing.

While we were dining, we watched as two guys entertained by making balloon sculptures and hats for the people around us.  Their creations were amazing.  When one table was finished and the balloon artist was starting to walk away from us, Kate yelled "Hey, balloon boy!"  That got his attention.  While older than a boy, he didn't seem to be upset by being called "balloon boy."  He came right over to our table and made Katie this lovely princess crown.

And now, back to the beginning of the day, which started n Disneyland California Adventure.

*Jennifer, Spencer, Kate, and I went on Soarin' Over California while Ben and Katie walked around.  They heard drumming and found the green army men from Toy Story putting on a great drum show.

*Jennifer, Spencer, and Kate rode California Screamin' while Ben, Katie and I waited in line to meet Jessie and Buzz from Toy Story.  And, as we were finished going through the line, we found out that Woody was on his way to replace Jessie.  So, we got back in line to meet Woody who was then joined by a couple green army men.  She was beside herself with excitement!

*After we finished the Toy Story meet and greet, we met back up with the rest of our family. Jennifer took Katie on the Toy Story ride while the rest of us went to ride California Screamin'.

*After lunch, we went back to the Disneyland Park. Ben and I waited with Katie to meet Tinker Bell. Jennifer, Spencer, and Kate rode the Matterhorn at the same time.

*We finished our day by seeing the World of Color show at the California Adventure park.  What a spectacular water and light display.  We all loved it. If you decided to go on a trip to Disneyland, you really do need to include this in your plans.  Let me know before you go and I'll give you a couple tips on how to get the most from the experience.  In this photo, you can see the water spraying and fire spouting during the show.


*And then, we went back to our hotel to get some much needed sleep.  I must point out that Katie has been going for three days with no naps and very long days.  She's been a super traveler and amazingly patient.

Wednesday, 4/6/2011

Tomorrow we head off for our family vacation to Disneyland.  We will be there through Sunday, spending three days in the parks.  I can't wait!!!  We, along with Ben's brother, gave the trip to their mom, Jennifer, for her 60th birthday.  Spencer is spending the night at our house tonight so that we can leave for the airport together, bright and early tomorrow morning.  

I prepared another puff pastry pizza for our meal tonight.  I finished using the crumbled sweet Italian sausage I prepared for our last pizza and added turkey pepperoni.  My friend Hilary suggested the turkey pepperoni.  I didn't like it as much as regular pepperoni, but it wasn't half bad.  In fact, I guarantee that I will finish off the bag next week:)  

While I was trying to get the pizza prepped for the oven, our neighbor came over to get the scoop on taking care of our cats, Spencer arrived, Ben came home, and Katie needed to give me updates constantly on The Princess and The Frog, which she was watching in the front room.  Goodness, talk about a bit of chaos. With pizza consumed, it was time to start, and finish, packing for our trip.

Sunday, 3/6/2011

I knew I was going to want to make pizza this week, but was pretty sure I wasn't going to want make my own dough.  So, I went with a package of two eight-inch pizza crusts from Boboli.  Tonight Ben made up a batch of Zesty Pizza Sauce, added it to the crusts, and then covered them with mozzarella and pepperoni.  Boy, did it ever hit the spot.  Katie ate a little of it, and was kind enough to share her left overs with with two of us.  Score!

Also, the sauce recipe makes enough for a couple medium pizzas.  We put the extra sauce in the freezer to use some other time.

If a good day can be measured by how many people in the house got to take a nap, then today was a fantastic day.  We all took naps:)  

Last night we ordered pepperoni pizza for Shellie and Katie to have while we were on our date.  We finished it off for our dinner tonight.

Sunday, 12/5/2010

Katie still had a bit of a fever this morning, so Ben stayed home with her while I went to church.   The children put on the most fantastic Advent Pageant today.  A ten-year-old in our church wrote the play and our music director wrote the music for it.  I was moved to tears by the whole production.  The props and costumes were perfect, the songs were touching, and the script was humorous and clever.  Wow...nicely done! 

For dinner, we finished off last night's pepperoni pizza.  Katie's fever is down, but she is still not back to her normal self.  She ate some pizza, but just doesn't seem to be hungry.  Hopefully she'll be better tomorrow.

Katie developed a fever today and was quite irritable.  We were planning on going out to see Christmas light displays this evening, but decided to keep her inside and warm instead.  We were also planning on going out to eat.  Since that didn't work out, we ended up ordering a double pepperoni pizza from Garlic Jim's.  Katie was watching Disney's "The Princess and the Frog" when the pizza arrived.  Rather than upset her by moving into the dining room, we just ate in front of the TV.  Ben and I used to eat in front of the TV every day, but have grown to love our time at the dinner table as a family.  Even so, it was kind of fun to do the TV thing as a family too:)

This morning I took Katie to Alki Beach to play in the sand.  What a beautiful morning for that outing!  She had lots of fun digging in the sand and looking at the boats and birds.  I only had to remove sand from her mouth once;)  Here are a few of my favorite photos from the morning.






And for dinner tonight, I decided to make pizzas, including dough from scratch.  Katie has been "helping" me rearrange the lower shelf of our pantry cupboard lately.  While putting everything back away, I was reminded that I had a jar of pizza sauce from Trader Joe's.  With pepperoni and Italian sausage left over from stoup last week, all I had to purchase at the store was mozzarella cheese.  I found a Bobby Flay recipe for pizza dough on www.foodnetwork.com.  It turned out ok.  It was probably the best pizza dough I have made myself, but was still a far cry from the greatness of Trader Joe's dough.  Here's the recipe I used:

Ingredients:

2/3 cup lukewarm water (105 degrees F to 115 degrees F)
2 1/2 teaspoons active dry yeast
1/2 teaspoon sugar
2 tablespoons olive oil, plus additional for oiling bowl
1 3/4 to 2 cups all-purpose unbleached flour
1/4 cup finely ground yellow cornmeal
2 teaspoons coarse salt

Directions:
In a large bowl stir together 1/3 cup water, yeast, and sugar and let stand until foamy, about 10 minutes. Stir in remaining 1/3 cup water, 2 tablespoons oil, 1 3/4 cups flour, cornmeal, and salt and blend until the mixture forms a dough. Knead dough on a floured surface, incorporating as much of remaining 1/4 cup flour, as necessary, to prevent dough from sticking, until smooth about 5 to 10 minutes. Form the dough into a ball.

Lightly oil the sides and bottom of a large bowl with oil, add the dough, turn to coat in the oil, cover and let rise in a warm place until doubled in size, about 1 hour. Gently punch the dough down and divide into 4 equal pieces. Roll each piece on a lightly floured surface into a 10-inch circle that is 1/8-inch thick. Brush off excess flour and transfer the dough to a baking sheet, cover each circle of dough with plastic wrap and continue stacking rolled out pieces on top of each other. Wrap well with plastic wrap and refrigerate until ready to grill.

Notes:
1.  I used blue cornmeal instead of yellow.  I don't think it made a difference other than giving the dough a different color.  
2.  My dough did not double in size.  It made four, 6-inch pizzas, instead of 10-inch pizzas the recipe said to expect.  Ben and I each ate one and a half for dinner and saved one for tomorrow. Katie had some cheese and ketchup with chicken nuggets dipped in it for her dinner.  I'm pretty sure she ate more ketchup than chicken tonight.
3.  When I picked it, I didn't realize that this recipe was to be used for grilled pizzas.  Instead of grilling, we baked our pizzas on a pre-heated pizza stone for 10 minutes in a 450 degree oven.  It was a good guess:)
4.  I don't think this was "the" pizza dough recipe for me.  I'll keep trying to find one that works for me.

We've been sick for 5-6 days now.  We should be on the mend, but Katie is the only one who seems to have made any real progress yet.  In fact, Katie and I picked Ben up from work early, because he wasn't feeling well.  When it came time for dinner, I made comfort food--Italian Sub Stoup with Garlic Toast Floaters.  My friend Jamie sent this Rachael Ray recipe to us several years ago and we are very thankful she did.  It is definitely one of our favorite soups.  And, just to clarify, it is calls a stoup: thicker than a soup, thinner than a stew. 

ITALIAN SUB STOUP with GARLIC TOAST FLOATERS

Stoup Ingredients:
2 tablespoons extra-virgin olive oil (twice around the pan)
3/4 pound (3 links) hot or sweet Italian sausage, split and meat removed from casing
1/4 pound pepperoni, diced
1 ham steak, diced (about 1/2 to 3/4 pound)
1 green bell pepper, seeded, quartered and sliced
1 medium yellow onion, peeled, quartered and sliced
1 (28-ounce) can diced tomatoes
Kosher salt and freshly ground black pepper
6 cups chicken stock
2 cups gemelli pasta or other short-cut pasta

Crouton Ingredients:
1/4 cup for croutons
5 cups cubed crusty bread
3 large cloves garlic, cracked from skin
1/2 cup grated Parmigiano-Reggiano, a couple of handfuls
1 teaspoon crushed red pepper flakes
1/2 teaspoon dried oregano

2 bunches arugula, trimmed and coarsely chopped (about 4 cups)

Directions:
1.  Place a large soup pot or dutch oven on the stove top and preheat to medium high heat. Add olive oil, 2 turns of the pan and the sausage. Brown and crumble the sausage, drain off excess fat if necessary then add the ham and pepperoni. Cook meats together 2 minutes then add peppers and onions and cook 2 or 3 minutes more. Add diced tomatoes and season with salt and pepper. Add chicken stock and bring stoup to a boil. Stir in pasta and cook for 8 minutes. Make croutons while pasta cooks.
2.  In a large skillet heat about 1/4 cup of olive oil, 4 turns of the pan over medium heat. Add garlic and cook 1 minute. Add bread to garlic oil, toss and toast the cubes 5 or 6 minutes. Season the toasty cubes with red pepper flakes, oregano and lots of grated cheese.
3.  Stir arugula into soup just before you serve it up. Ladle up the stoup and float several toasty garlic bread cubes in each bowl.

Notes:
1.  The very first time we made this stoup, we added the arugula.  The problem was that we didn't eat all of the stoup the first night and yet we had added in all the arugula.  It was soggy and gross to eat after the first meal.  So, if you plan on using arugula, I would recommend adding arugula to each bowl as you go, rather than adding in the entire amount to the large pot. We usually just skip this ingredient. 
2.  I always use some kind of spiral noodle in this stoup.  The original recipe I received called for 1 cup of pasta.  We doubled it to 2 cups.  The most current recipe on the Food Network calls for a 1/2 pound of pasta.  I definitely don't think it needs 1/2 a pound.  1-2 cups should be plenty! 
3.  The recipe says to add kosher salt to taste.  I find that the meats provide plenty of salt.  Definitely taste it before dumping in any salt. 
4.  In the past year I've had a difficult time finding decent pepperoni sticks in the grocery stores I shop. When I haven't been able to find pepperoni sticks, I have substituted with prosciutto or dry salami.  Although the other meats work fine, I prefer the flavor of the pepperoni.  Tonight I used thin slices of pepperoni, like the kind you would used on a pizza.  It was just fine. 
5.  This makes enough for 6-7 generous bowls of stoup.  Now, the croutons are a different matter.  The recipe says that 5 cups of bread cubes is enough for 4 bowls of soup.  I'm sure that is true if you limit yourself to what is reasonable.  Ben and I like them too much to spread them out that far:)  I usually end up making new croutons each night we have the stoup.

The last leg of our vacation was super smooth. I highly recommend driving between Portland, OR, and Seattle, WA, on the Sunday of a three day weekend. There was NO traffic! After unloading the rental van, removing the top carrier, returning the van to the airport, and taking a cab home, neither of us was interested in cooking. Garlic Jim's Pizza to the rescue. We took advantage of a coupon for a $5 large pepperoni pizza. The funny thing is that we ended up paying $10 plus delivery fee for it since they have a $10 minimum for delivery orders.

Ah, it is good to be home:)

Our destination today was Bandon, OR. We made it to Brookings, OR, and needed to stop for dinner. We followed the GPS to a couple potential dinner spots, but weren't pleased with what they looked like. Finally, we followed it to Wild River Brewing and Pizza Co. It was a very busy place. We adults shared a pepperoni and sausage pizza and ordered a chicken breast basket for Katie. The pizza was ok- not the best, not the worst. The fun part of the pizza was that they sliced it into small diamond shapes. Definitely different than the standard slices.

The basket contained two, bone-in fried chicken breasts and thinly sliced potatoes, which were breaded and fried. Ben said the chicken was some of the best fried chicken he had ever tasted. Katie ate a little chicken and a little pizza, topped off with goldfish crackers. I didn't care for the potatoes at all. They were kind of soggy once the outer breading was gone.

Two hours later, we finally made it to our hotel- another excellent location for us, the Best Western Inn at Face Rock. We had two adjoining rooms that were plenty spacious. Inside the mini-fridge there was a sandwich baggie containing a plastic spoon and a note that read "Need Ice Cream? See the front desk." How did they know we needed ice cream? So, I went to the front desk and came back with small cups of chocolate ice cream for us. How nice:)

Happy Vacation to us! We are officially on vacation today. We are headed to Carmel, CA, for the wedding of our friends Lauren and Tim. Ben's mom and brother are on the road with the three of us. Our goal was to make it to Medford, OR, for dinner tonight. But, we didn't make it that far. We stopped for pizza at Abby's in Sutherlin, OR. We split a delicious pepperoni and sausage pizza. Katie was super entertaining while we were waiting for the pizza to bake. After being cooped up in the car all day, she enjoyed walking around and playing with the highchair straps.

Tomorrow, we head to Carmel.

Ben and I joined a PEPS (Program for Early Parent Support) group when Katie was just over one month old. We spent 12 weeks with a facilitator and have since then gathered every other week on our own. There are 5 couples in our group, each with one child about Katie's age, and we rotate between our 5 homes.

Tonight Katie and I went over to Oliver's house for
Zeeks Pizza and homemade apple crisp w/ice cream. I had a slice of pepperoni and a slice of Cherry Bomb which has Italian sausage and sweet-hot roasted red peppers on it. Soo tasty! Katie ate some pork and spring vegetable w/pasta baby food before we left our house. Once at Oliver's house she had a little of my pizza, lots of cheese, and a few random crackers dropped by the other kids. It is so much fun to watch these 5 little people walking around, playing, eating, chatting near each other. They don't interact with each other much yet. There were a couple outbursts when food or sippy cups were returned to their owners, but all in all a very fun night.

Ben is out of town on a business trip and told me he had some okay Thai food. Huntsville, Alabama is probably not the best place for good Thai.
